I am working on grilled pizzas. Today was slow which gave me some time to play around with the pizza crust. Since I don’t have a pizza oven I must make due with a grill pan and a conventional a oven. The crust turned out crisp and charred at the edges. We made a sopprassetta and blue cheese pizza and a simple provolone pizza. Tomorrow will try a proscuito, arugula and ricotta. If we get it right we’ll run it as a special on Friday and Saturday.
Also working on an oven roasted turkey breast sandwich.
