Lots happening today. First my good friend Jason installed our new awnings. They look terrific. The colors are so fresh. Now the rest of the building looks a bit dirty in comparison.
I baked four loaves of bread. Two olive, two regular. I learned that I can easily bake six loaves at a time. This is very exciting. I was afraid that four was the number. The ovens are working great. I checked the temperature today with an oven thermometer and the temp was right on.
I have attached a few photographs. The color is nice and the texture is just right.
We ate sandwiches on the long wood table.
Gary helped again. I asked Anne if I am taking advantage of my friends. They have helped so much. He installed three black wooded shelves. We plan to use these for merchandise.
We picked Monday December 20th as our opening day. Now to get working.
Great news. We passed the health department yesterday. The inspector was great. He looked the place over thoroughly and told me “ok, you are ready to open”. He did ask me to change one light bulb and to fix the door closer to the back door. Other that, he was very satisfied.
I am flooded with a sense of relief to have that behind us. We now have new pressures, but the health dept was a stress unlike many other.
We got a paint job on Thursday night. My brother -in- law Ray Spencer splashed vintage green paint on the back wall. The addition of the color makes everything pop in the restaurant. It couldn’t look better. Anne and I are extremely grateful to Ray and Clare. It was a wonderful treat and a terrific suggestion. Grazie mille.
So many people have helped us with Fiore. As we get close to opening I will dedicate a post to them. We could not have done this without all of their help. I will guarantee you. They will be the first to be fed at Fiore and it will happen before the doors are open to the public. Again Grazie mille.

Anne changed pumpkins for mini Christmas trees. Fiore now looks ready for the holidays. If we could only get the health dept to show up and give us the OK then we’d be set. They returned my call today and assured me that we would be inspected on Friday. That’s good news.
